Mardia & Mustaffa's Bakery
Our Bakery is located in the Malay village of Sungai Buloh, Selangor. In this rural setting we are far enough away from the hustle and bustle of the city where we can practice our artisan trade. Yet within a few minutes we can deliver hot fresh bread to our retail outlets.
We offer Organic Bread, hand crafted in the traditional way of the European Bakers and baked in a wood-fired oven. Our flour is ground from Demeter grown berries in our own stone mill especially imported from India. The flours are mixed with natural levain and filtered well water and sea salt before being shaped by hand and baked on the floor of our wood fired oven.
Organic Vegan Baked Products
We have been baking with Organic Flours since 2004. Before
that we were grinding our own flour from locally sourced grains. We
always strive to provide baked goods without any harmful additives,
colouring or preservatives.
Now that a wide range of Organic grains are
available in Malaysia we use them exclusively. Organic wholegrain flour
does not have a long shelf life and so we prefer to grind our flour
each day. As berries, grains last almost indefinitely. When our grains
are ground, they are still alive and the goodness
intact.
Increasingly we use natural levain to raise our breads. This has not been easy. Already faced with the problems of maintaining the levain in tropical temperatures, we also have to face customer preferences. Much of the bread sold in Malaysia is of a soft pale texture. This texture is produced by the use of large quantities of commercial yeast and additives. These are the culprits contributing to many of today's modern diseases. Natural levain on the other hand provides improved taste as the bread takes longer to ferment and rise (bread is a fermented food) and eases the digestion of grains by human beings. The firmer texture and the darker crust of our breads, provide greater taste and exercise for the teeth. Chewing of the bread stimulates the production of digestive juices required for proper digestion of food.
Mardia and Mustaffa try to follow a generally environmental approach to living. We have removed animal products from our baked goods. We try to provide our products in minimalist packing which only eventually becomes waste. We invite you to visit our Home where we bake these breads. We have set aside Sundays for visits, but please call first. Please note: we bake during the night for our retail customers. We do not keep bread in stock for sale. We may however have our hand-made Biscuits, Soaps and Coconut oil for sale.

Organic Soft Rye
Rye Bread designed for Malaysians. The texture is soft and has plenty of holes. Made with Demeter Rye Grain, Organic Unbleached Wheat Flour, Sea Salt and Yeast.
Organic Multigrain
A truly healthy loaf, packed full of Organic goodness. Demeter Rye Grain, Demeter Wheat Grain, Organic Unbleached flour, Organic Oats, Organic Sunflower Seeds, Organic Flax Seeds, Organic Sesame Seeds, Natural Levain, Sea Salt and Filtered Water.
Organic Unyeasted Rye
Made over 2 days, this loaf provides the classic taste of Continental Rye. The rich dark crust is chewy and full of taste, the inside soft. Made from Fresh Ground Demeter Rye Wheat Berries, Unbleached Organic Finnish Wheat Flour, Water, Salt and Natural Levain.
Organic Maize & Barley Rolls
Made from a Mash of Organic Maize, Barley, Oats and a Poolish these rolls provide a high fibre Bread Roll to accompany a meal or just as a snack. Made from Organic Finnish Unbleached Flour, Organic Maize, Barley, Oats, Salt, Honey, Yeast and Filtered Water.
Organic Spelt Loaf
Some people who are gluten intolerant can tolerate Spelt. Spelt does contain gluten, but for some reason many have had success with this bread. Perhaps that it is an ancient grain that has not been subject to genetic manipulation as has wheat. Give it a try, it has a great nutty taste. Organic Spelt Flour, Demeter Levain, Sea Salt and Filtered Water, Yeast.
Organic Mardia Nutty
A Malaysian favorite. This soft tender bread is ideal for sandwiches, toast and mopping up sauces. Made from Organic Unbleached flour, Demeter Whole Grains, Organic Rolled Oats, Organic Walnuts, Organic Pumpkin and Melon seeds, Coconut Oil, Yeast, Sea Salt and Filtered Water.(Note: Nuts will sometimes change depending upon availability).
Organic Mardia Wholemeal
The same Malaysian favorite, without the nuts and seeds.
Organic Mardia Sandwich
The same recipe as the Organic Mardia Whole above, but is a larger Sandwich size.
Sesame Crescent Rolls
An instant reminder of an eastern European Cafe, where these rolls are served for breakfast with piping hot coffee on the sidewalk. They are made in the traditional way from Organic Unbleached Flour, Organic Olive Oil, Organic Raw Cane Sugar, Yeast, Sea Salt, Filtered Water and covered in Organic Sesame Seeds.
Organic Sweet Buns
These Sweet Buns are a real treat for Vegans. No Egg, no Dairy. The bun is made from Organic Unbleached Flour, Coconut Oil, Organic Raw Cane Sugar, Flax Seeds, Rolled Oats, Sea Salt, Yeast and Filtered Water. The fillings are : Organic Red Bean, Organic Green Bean, Organic Kaya (made from Organic Pumpkin), Natural Coconut, Raisin and Cinnamon Roll.
